1. Introduction

Processing and Storage Engineering of Agricultural Products is the discipline that takes agricultural products as the research object, based on biology and engineering, studies the basic science and engineering technical problems, like agricultural products storage and transportation, processing and the comprehensive utilization of by-products during processing.

2. Research Content

According to the characteristics of agricultural products, to improve product quality, to maximize the maintain or improve the nutritional value of products, improve the external sensory characteristics, improve product storability, reduce the cost and energy consumption for the purpose, the principle and theory of the study of agricultural product processing and storage. According to the achievements of modern high new technology, research and development of all kinds of food; at the same time with the progress of modern biological technology and nutrition, research and design for the 21st century new nutrition and health food processing technology, technology and equipment to solve practical problems need to be solved urgently in production.

3. Research Directions

1) The deep processing of agricultural products

Main research area:

(1) The principle and technology of cereal food processing, the application of food additives in the processing of cereals, the development of cereal grains and the comprehensive utilization of by-products;

(2) the principle and technology of the processing technology of fruit and vegetable products, the development of new products, the extraction and utilization of functional components, the comprehensive utilization of by-products and the quality control of products.

(3) Production theory and production technology research and development of edible starch and protein film.

2) Animal products processing and quality control

Main research area:

(1) Research on the modern production technology and quality control method of traditional meat products;

(2) Theory and application technology of safety inspection and quality control in the processing of animal products;

(3) The processing theory and processing technology, new product development, the comprehensive utilization of by-products and the extraction and separation of functional components in animal products.

3) Quick frozen food technology and quality control

Main research area:

(1) Research on the theory and technology of quick frozen food processing;  

(2) Research on the optimization of raw materials and quality improvement of frozen noodles and quick frozen rice products;

(3) New product development and quality control of quick frozen food;

(4) Research on the flavor keeping of frozen food and the improvement of production technology;

4) The development and utilization of agricultural products

Main research area:

(1) Research on the characteristics of agricultural products quality and nutrition structure;

(2) Study on the processing technology and processing mechanism for food;

(3) The extraction and purification technology of functional components in agricultural products.
